Small-scale equipment and largely manual methods are central to production at the original distillery. Malted barley and spring water are mixed in an open cast-iron mash tun. A Morton Refrigerator then cools the wort with cold water before it enters Oregon pine washbacks. Distillation takes place in two copper pot stills; water-cooled coils, known as worm tubs, condense the vapours.\u003c\/p\u003e\n\u003cp\u003eAndrew Symington founded Signatory Vintage with his brother in 1988. His involvement with single-cask whiskies had begun while he was working at Prestonfield House Hotel in Edinburgh. He acquired Edradour in 2002, and by 2007 the entire Signatory operation had moved to the distillery site. This brought the selection and bottling of whiskies from other distilleries together with its own whisky production in one location.
