The distillery malts some of its barley on traditional malting floors. The germinating grain is turned by hand; during the subsequent kiln drying, peat from nearby Hobbister Moor provides the characteristic smoke.\u003c\/p\u003e\n\u003cp\u003eThe heather-rich peat gives the smoke its floral character. Sherry casks are another foundation of the distillery’s style: casks made from American and European oak are built in Spain for Highland Park and seasoned with sherry for around two years before travelling to Orkney for whisky maturation.
