This was founded in 2019 in Cahersiveen, County Kerry, and specializes in the production of gin and whiskey. The whiskey is made from a blend of malted and unmalted barley and is triple distilled in copper pot stills. The aging takes place in former bourbon barrels, followed by a refinement in Pedro Ximénez sherry casks, with a short finish in former peat whiskey barrels, which adds a subtle smokiness.

Tasting Notes:

Nose: The nose presents subtle fruity notes with a hint of caramel and a light, smoky touch.

Palate: On the palate, a creamy texture reveals flavors of dried fruits and a nuanced sweetness.

Finish: The finish is pleasant and smooth, with a lasting, slightly smoky aftertaste.

Distillery/Bottler: The Skellig Six18 Distillery is known for its innovative approaches to whiskey production and produces all its bottlings in-house.
