The brewery uses Saccharomyces sake, a historic sake yeast preserved to this day. Locally grown Asa no Hikari rice from Saitama forms the base. After polishing, 70% of the original rice grain remains.

The slow-working yeast is combined with Yondan Jikomi, a method in which the mash is built up in four stages rather than the usual three. The sake then matures for two to three years at room temperature in enamelled tanks. It undergoes no activated charcoal filtration before bottling; this approach is known as Muroka. In the glass, the sake ranges from gold to amber and combines a full-bodied character with impressions of puffed rice, caramel and cocoa.

The gift box depicts a historic scene at Nihonbashi Bridge. The sake contains 15.5% alcohol and can be enjoyed at room temperature or warmed. Its robust flavour pairs well with meat dishes such as steak and yakitori, as well as dishes served with rich sauces.

Tasting Notes:

Nose: Fresh pome fruit and cereal notes meet delicate floral hints on the nose.

Palate: The sake is soft on the palate, with savoury umami and a gentle sweetness.

Finish: Light fruit notes linger through the long finish.

Distillery/Bottler:

Yokota Shuzo has been brewing in Gyōda, in Saitama Prefecture, since 1805. Its founder, Shōemon Yokota, came from the Ōmi region and sought a location with good water for his brewery. He chose the name Nihonbashi in memory of the Tokyo district where he had trained with a sake wholesaler.

Gyōda lies in an area rich in groundwater between the Tone and Arakawa rivers. The brewery draws its brewing water from its own well, fed by underground water from the Arakawa system. The relatively soft water favours slow fermentation and a rounded flavour.

Facts:

Country of origin

Japan

Product category

Sake

Packaging

Gift packaging

Volume

0.72 litres

Alcohol content

15.5%

Market operator

bringts Schweiz GmbH, Steinrain 18, 4112 Flüh/CH

Bottler

Official bottling

Colouring

No

Cask strength or high alcohol content

No

Allergens

None

Organic certification

No

Manufacturer

Yokota Sake Brewery Inc.

Brand

Nihonbashi

Product type

Junmai sake
