Special features: This winter batch release comes from Daftmill Farm in the Scottish Lowlands, where, in addition to farming, single malt whisky has been produced using traditional craftsmanship since 2006. The whisky matures for 12 years exclusively in first-fill bourbon casks and is only distilled during the off-season when the fields are dormant. The 2024 Winter Release is limited to 7,500 bottles and is based on the Publican barley variety, which was harvested in 2009 and malted in 2010.
Tasting Notes:
- Nose: Fresh notes of cereals, green apples and delicate floral notes, accompanied by fine vanilla from the bourbon barrel.
- Palate: Balanced with malty sweetness, hints of honey, light wood and slightly nutty nuances.
- Finish: Clear and persistent, with elegant spice and a subtle fruit acidity in the aftertaste.
Distillery/Bottler: Located in the Lowlands of Scotland, Daftmill Farm combines traditional farming with whisky distilling. The Cuthbert family processes their own grain on-site and places great emphasis on quality and regionality. The distillery works in small batches and mostly limits production to off-season months to avoid disrupting agricultural activities. The original bottlings represent craftsmanship and sustainable production processes.
