Kilchoman Fino Sherry Cask Matured 2023 Limited Edition

Special features: This limited edition marks the second release from Kilchoman that has been fully matured in Fino Sherry casks. For this bottling, 20 Fino Sherry butts from Bodega José y Miguel Martín were selected, in which the whisky matured for at least five years. With a limited release of 15,650 bottles and an alcohol content of 50%, this single malt is presented in natural color and without chill filtration.

Tasting Notes:

• Nose: Elegant, dry peat smoke that gradually opens up to the characteristic fruity notes of Kilchoman. The Fino Sherry casks impart a dry, smoky oak note to the whisky, harmoniously blending with the intense peat smoke of the malt. A lingering aroma of sweet caramel rounds off the bouquet.
• Palate: Immediate sweetness of honeycomb that develops into rich toffee and caramel. The typical Kilchoman flavors of candied fruits and fresh citrus combine with delicate almond notes and a subtle peat smoke that accompanies the palate.
• Finish: A long-lasting, thoughtful finish that combines the malty notes of Kilchoman with the matured citrus fruit profile of the Fino Sherry casks. A subtle peat smoke that permeates the palate shares the finish with hints of dark chocolate.

Distillery/Bottler: The Kilchoman Distillery, founded in 2005, is the first new distillery on Islay in over a century. It follows the model of a traditional farm distillery, where all production steps are carried out on-site. Kilchoman is known for using local malt and combining traditional craftsmanship with innovative maturation methods.
