Special features: The LAW The Ibiza Gin is produced in limited edition on the Spanish island of Ibiza by LAW – Spirit of Ibiza S.L. It is characterized by the use of exclusively local botanicals, including prickly pear, Pimientos de Padrón, fresh citrus fruits, and salt from the famous salt flats of Ibiza. It is distilled in a traditional copper alembic, which gives the gin a special depth and complexity.
Tasting Notes:
- Nose: Fresh citrus notes of oranges and lemons, accompanied by spicy aromas of juniper and a hint of prickly pear.
- Palate: A balanced interplay of fruity and spicy components, supported by the slight heat of the Pimientos de Padrón and a salty sea breeze.
- Finish: A long, harmonious aftertaste with lingering citrus and spice notes, rounded off by the salty note of Ibizan salt.

They use only hand-picked botanicals from the region for their gin and distill in small batches to ensure the highest quality.
