PALENQUEROS Espadin Alberto Y Onofre Ortiz (Mezcal)

Special features: This mezcal is produced by the Ortiz family in the Miahuatlán de Porfirio Díaz region, Oaxaca, Mexico. The agaves are roasted in earthen ovens and then crushed by hand with a mesquite wood hammer in a stone trough. Fermentation takes place in pine wood barrels with wild yeasts, and distillation occurs in 350-liter copper pot stills. The mezcal is bottled directly after distillation with an alcohol content of 49%.
