Harmony of Eight is among Bimber’s first age-statement whiskies. Distilled in 2016, the single malt spent eight years maturing in ex-bourbon and Pedro Ximénez sherry casks. Only then were the whiskies from the two cask types married: the ex-bourbon casks contribute lively fruit and charred-oak notes, while the PX casks bring a fuller fruit character.

In 2024, Bimber bottled 1,090 bottles of 0.7 litres each at 50% ABV. The whisky was neither chill-filtered nor coloured.

Tasting Notes:

• Nose: Ripe strawberries and raspberries appear on the nose alongside meringue. Mango and pineapple add to the fruit, with gingerbread and fruit gums following.
• Palate: The whisky feels smooth and well integrated on the palate. Berries and tropical fruit sit alongside melted chocolate, nougat and hazelnuts; cinnamon and lightly peppery oak spice emerge only afterwards.
• Finish: Fruit sweetness and oak come together in the lingering finish as the spices gradually fade.

Distillery/Bottler:

Bimber Distillery makes Harmony of Eight in West London. The distillery filled its first casks on 26 May 2016. Its barley comes from a single farm and is traditionally floor-malted. After mashing by hand, the wort ferments for seven days in open wooden washbacks. The fermented liquid is then distilled in small, direct-fired copper stills. The whisky subsequently matures in selected casks, and Bimber bottles it on site.
