Special features: With the "Harmony of Eight," the Bimber Distillery presents its first single malt with an age statement. This eight-year-old whisky combines the vibrant aromas of charred bourbon casks with the full-bodied depth of Pedro-Ximénez sherry casks. Distilled in 2016 and bottled in 2024, it was released in a limited edition of 1,090 bottles. The whisky was not chill-filtered and contains no coloring.

Tasting Notes:

• Nose: Fresh, ripe strawberries and raspberries combine with aromas of meringue, mango, and pineapple. A hint of gingerbread and a selection of gummy bears complete the bouquet.
• Palate: Full-bodied and harmoniously integrated. A mix of berry and tropical fruits is accompanied by melted chocolate, nougat pieces, and chopped hazelnuts. A subtle spice of cinnamon and a touch of pepper adds depth.
• Finish: A long-lasting aftertaste where the sweet fruitiness elegantly merges with lingering oak and fading spices.

Distillery/Bottler: The Bimber Distillery was founded in 2015 in London and stands for artisanal tradition and uncompromising quality. 100% of the barley used comes from its own farm and is malted on the floor in the traditional way. After slow fermentation in handcrafted wooden washbacks, distillation takes place in direct-fired copper pot stills. It matures in carefully selected casks, and bottling is done exclusively on-site at the distillery. Bimber combines old methods with a modern vision and has established an international reputation in just a few years.
