Special Features:

The Richard edition from the Shoulders of Giants series is a single-cask bottling from Pedro Ximénez sherry cask #855/63. Bimber bottled it in March 2026 at 58.7%, with an outturn of 302 bottles.

Tasting Notes:

• Nose: Ripe dark fruit and sherry sweetness combine with gentle spice to create a warm, deep impression.
• Palate: The palate is powerful and concentrated, with raisins, dates, cocoa and pleasant oak spice; the texture is full-bodied and oily.
• Finish: The finish is long, combining spice and subtle fruitiness with dark sweetness before fading on a dry, elegant note.

Distillery/Bottler:

Bimber Distillery produced this London Single Malt and bottled it at its own distillery in London. The distillery sources its barley from a single farm, traditionally floor-malts it and mashes by hand. Seven days of fermentation in wooden washbacks are followed by distillation in small, directly fired copper stills; maturation and marrying also take place on site.
