Wolfgang – The Composer is a limited single-cask bottling from the Shoulders of Giants series and pays tribute to Wolfgang Amadeus Mozart. The London Single Malt was finished in Tawny Port cask 554/51. The whisky was bottled in March 2026 at 57.5%, with an outturn of 307 bottles; it is neither chill-filtered nor coloured.

The Tawny Port finish combines Bimber’s fruit-forward style with ripe red berries, prunes and raisins. Honey, warm spices, caramel and nuts lead into wood, cocoa and dry tannins.

• Nose: The nose combines ripe red berries, prunes and raisins with honeyed sweetness and a hint of warm spices.
• Palate: On the palate, juicy berries and malt meet caramel, a soft, nutty Port note and subtle woody tones.
• Finish: The long-lasting, spicy finish brings out cocoa and a light, dry tannic structure.

Bimber Distillery distils its single malt in London. The barley used for its fruit-forward house style comes from a single farm. Following traditional floor malting, fermentation takes place in open washbacks before the spirit is distilled in direct-fired copper stills. Through its Shoulders of Giants series, Bimber pays tribute to historical thinkers, innovators and artists; Wolfgang – The Composer focuses on W. A. Mozart.
