A finish in a first-fill Pedro Ximénez sherry hogshead gives The Untamed Grace its character within the WhiskyHeroes series. This ten-year-old Ardlair is the unpeated style made at Ardmore Distillery. Brave New Spirits released the Highland single malt at 56.5% ABV, with 211 bottles produced.

Honey, floral notes and dried fruit shape this Ardlair. Fig and raisin sit alongside brown sugar, dark chocolate and orange; cinnamon, clove, espresso and oak add spicy and roasted accents. Date, caramel and a note of fruitcake complete the picture.

Tasting Notes:

• Nose: Pronounced honey joins dried fig and raisin on the nose. Cinnamon and oak complement the fruit.
• Palate: On the palate, brown sugar and dark chocolate appear within a dense texture, while fresh orange contrasts with the sweetness.
• Finish: The finish is long and dry, with clove, cinnamon, a delicate espresso note and a hint of oak.

Distillery/Bottler:

Ardmore Distillery stands where the Highlands meet Speyside. It uses peat from Aberdeenshire for its classic Ardmore whisky, whereas Ardlair is its unpeated style. Both are made using the same production equipment, including traditional wooden washbacks. The name Ardlair refers to nearby standing stones.

Independent bottler Brave New Spirits selects Scottish whiskies for its WhiskyHeroes series. For The Untamed Grace, it had the Ardlair matured further in a first-fill PX sherry hogshead before bottling the whisky.
