Special Features:

For Clairin Sonson, the sugar cane is not fermented directly as fresh juice: after pressing, the juice is slowly reduced to syrup. The local Madame Meuze sugar cane variety grows in Cabaret, northwest of Port-au-Prince. The syrup ferments spontaneously with naturally occurring yeasts before being distilled in a direct-fired pot still.

This bottling of the 2021 vintage is bottled without dilution at 51%. It contains no colouring and is not chill-filtered. Its character combines herbal freshness and fruit with sweetness and spice. The bottle contains 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: The nose reveals fresh herbal notes of basil and lemongrass, alongside ripe citrus fruit and subtle hints of exotic spices.
• Palate: On the palate, the Clairin is direct and fruity, with notes of liquorice. Its intense, full-bodied flavour combines sweetness with spice.
• Finish: The long finish is warming and gently spicy, with lingering exotic aromas.

Distillery/Bottler:

Cabaret lies in Haiti's Arcahaie district, northwest of the capital, Port-au-Prince. Sonson is part of The Spirit of Haiti's range of Clairins, each reflecting the production methods of an individual producer. The sugar cane variety, spontaneous fermentation and distillation over an open fire are important foundations of their distinctive character.

The Spirit of Haiti was founded in Port-au-Prince in 2012 to give small rural Clairin producers access to the international market and preserve their traditional methods. The company handles bottling, labelling and export, among other activities. Their shared approach to production includes harvesting sugar cane by hand, fermentation with wild yeasts and batch distillation in small pot stills.
