Special Features:

This Dalmore from the Symington's Choice range matured for 21 years in a first-fill Oloroso sherry hogshead. The whisky was distilled on 22 October 2003 and bottled from single cask 14743 on 11 November 2024. Signatory Vintage produced 275 numbered bottles at a natural cask strength of 53.6%. The whisky is neither chill-filtered nor coloured and comes in a metal tin.

The long maturation in Oloroso sherry wood accompanies a profile of dark fruit, nuts, chocolate and spice. Plum preserve, black cherries and dates mingle with raisins, blackcurrants and figs. Orange peel adds a brighter note, while toffee, cinnamon, nutmeg and oak complement the fruity sweetness.

Tasting Notes:

• Nose: On the nose, plum preserve, black cherries and dates combine with dark sugar syrup and chocolate. Toasted walnuts, orange peel and a hint of espresso join them, with oak in the background.
• Palate: The whisky feels silky and full-bodied on the palate. Fig compote, blackcurrants and raisins meet toffee, nutty sweetness and dark chocolate. Cinnamon and nutmeg add spice, while coffee and dried citrus peel provide a more bitter counterpoint.
• Finish: The long, warming finish leaves cocoa, spiced fruitcake and oak that grows drier. Hazelnut praline and a hint of leather linger.

Distillery/Bottler:

Dalmore distils its Highland single malt near Alness on the Cromarty Firth. Founded in 1839, the distillery uses unusually shaped stills: its wash stills have flat tops, while water jackets surround the necks of its four spirit stills. Whyte & Mackay acquired the distillery in 1960.

Andrew Symington founded the independent bottler Signatory Vintage with his brother in 1988. After acquiring Edradour Distillery in 2002, he relocated Signatory Vintage's operations to its site near Pitlochry by 2007. Andrew Symington personally selects single casks for Symington's Choice; this Dalmore was bottled from Oloroso hogshead 14743.
