Edinburgh Cannonball takes the historic Navy Strength style and connects it with Edinburgh’s maritime history. The famous One O’Clock Gun at Edinburgh Castle provides both its name and its inspiration. This dry gin is bottled at 57.2% and relies not only on high alcohol strength but also on a particularly generous quantity of botanicals.

The higher alcohol strength allows a greater quantity of botanicals to be used. The recipe contains almost twice as much juniper and citrus as other gins in the Edinburgh Gin range at the time. This contributes to the smooth mouthfeel and balances the alcoholic warmth. Szechuan pepper adds a tingling, warming accent, while lemon and orange complement the juniper-led character. This combination works equally well in a gin and tonic, a Martini or a Negroni.

Tasting Notes:

• Nose: On the nose, the gin is bold and distinctly spicy.
• Palate: Pronounced juniper takes centre stage on the palate, accompanied by pepper and piquant spice.
• Finish: The spice persists on the finish, mingling with fresh citrus notes. Szechuan pepper leaves a warming tingle.

Distillery/Bottler:

Edinburgh Gin was launched in 2010 and belongs to the family-owned Scottish spirits company Ian Macleod Distillers. The brand develops its gins in Edinburgh, bringing together the city’s history and the exploration of different botanical recipes.

The Arches distillery, already open by early 2025, gave Edinburgh Gin a new home near the Royal Mile on the historic Trinity Church site. It houses the two copper stills Annie and Lina, each with a capacity of 2000 litres, alongside the smaller Matilda for experimental creations. Annie and Lina are named after the first female gardeners at the Royal Botanic Garden Edinburgh. The facility combines production with visitor experiences that illustrate how botanicals influence aroma and flavour.
