Distillery/Bottler: The family business Jean-Luc Pasquet, founded in 1970, manages 14 hectares of vineyards in the Grande and Petite Champagne. Since 1995, the estate has been operated using organic methods, with the grapes pressed directly and the must fermented with natural yeasts. The double distillation takes place in a traditional 20-hectoliter alambic, and the aging of the cognac occurs in Limousin oak barrels.
