Special Features:

This single pot still whiskey matures in first-fill bourbon casks before spending a further 18 months in Oloroso sherry casks. It is made using malted and unmalted barley alongside oats.

The whiskey is distilled, matured and bottled on Achill Island. It is bottled at 47% alcohol in a 0.7-litre bottle, with no added colouring.

Tasting Notes:

• Nose: The nose reveals figs and peaches, followed by honey and toasted oak spice.
• Palate: The whiskey feels velvety and soft on the palate. Peach and cream lead the opening, before a fuller stone-fruit flavour develops.
• Finish: Molasses sweetness lingers on the finish, accompanied by a hint of liquorice.

Distillery/Bottler:

Achill Island Distillery is located in Bunnacurry on Achill Island, off the coast of County Mayo in western Ireland. John McKay founded the distillery in 2019; after his death, his sons Michael and Sean continued running the family business. Its Atlantic location brings sea air and moderate temperatures, which shape the local maturation climate.

Long fermentation times are part of the distillery's approach: fermentation in its seven washbacks lasts seven days in winter and five days in summer. The water comes from Lough Corrymore and passes through quartz sandstone and amethyst rock on its way to the distillery.
