Clonakilty Port Cask brings together Single Pot Still Whiskey and Single Grain Whiskey. The blend combines whiskey matured in former bourbon casks with whiskey matured in former port wine casks from Portugal’s Douro Valley. This combination shapes a whiskey whose fruitiness ranges from sweet fruit notes to cherries and raisins, accompanied by gentle spice.

The whiskey is offered at 43.6% alcohol in a bottle containing 0.7 litres. Its colour develops without added colouring.

Tasting Notes:

• Nose: The nose reveals fresh, sweet apples, ripe peaches and vanilla. The aroma has a creamy quality, with a subtle woody note remaining in the background.
• Palate: Pronounced fruitiness takes centre stage on the palate, with cherries and raisins. Gentle spice notes and a hint of cardamom complement the fruit.
• Finish: The medium-length finish brings mild spice and a subtle chocolate note.

Distillery/Bottler:

Clonakilty lies in County Cork in south-western Ireland. Behind the distillery is the Scully family, who have farmed their land for nine generations. For their own whiskey production, they grow a traditional barley variety and use spring water from a deep borehole in the rock. The distillery stands on the waterfront in the town centre and operates three copper pot stills.

Clonakilty uses both malted and unmalted barley to make its own whiskey. Extended fermentation gives the yeast more time to develop aromas, followed by triple distillation. Water is also added gradually, a process Clonakilty calls Gentle Cut. The whiskey matures in oak casks exposed to Atlantic air.
