Special Features:

The five-year-old Merchants’ Quay Single Grain matured in American bourbon casks before being finished in a Moscatel hogshead and a Pedro Ximénez sherry butt. This combination of casks brings caramel sweetness to its fruit notes and a dry sherry accent to the finish. The whiskey is bottled at 46%; its colour comes from cask maturation, and it is not chill-filtered.

Tasting Notes:

• Nose: The nose offers juicy fruit, caramelised apple and Demerara sugar, with subtle hints of elderflower and Jaffa Cakes.
• Palate: On the palate, mandarin and other orchard fruits mingle with dates in dulce de leche, ripe black cherries and honey. Sweet custard and granola complement the fruit, alongside spice and a hint of warm oak.
• Finish: Dry sherry notes, browned sugar and mild spices linger on the finish.

Distillery/Bottler:

Great Northern Distillery in Ireland’s County Louth distilled the single grain for this bottling. Copeland is responsible for the Merchants’ Quay range, its cask programme and bottling. The company began in 2016 with a £30,000 crowdfunding campaign backed by more than 370 supporters. After restoration, it moved into a former cinema and bottling building near the harbour in Donaghadee, which was called Merchants’ Quay in the 17th century. Copeland uses three custom-made copper stills there for its own spirits; the single grain in this edition, however, comes from Great Northern Distillery.
