Special Features:

Merchants’ Quay combines three whiskey components with different maturation regimes. The grain whiskey initially spent twelve months in a new American oak cask, followed by another 24 months in a re-charred bourbon cask. The double-distilled malt matured in a first-fill American bourbon cask, while the triple-distilled malt matured in an Oloroso sherry butt. The blend is bottled at 40% ABV, retains its natural colour and is not chill-filtered.

Toffee apple, dark berries and vanilla mingle with clove spice and cedarwood. Fleshy fruit, honey, orange peel and oak spice emerge on the palate before dry, toasted oak defines the finish.

Distillery/Bottler:

The Copeland Distillery developed Merchants’ Quay together with Brian Watts, Master Distiller at the Great Northern Distillery in Dundalk. The spirits used for this blend come from Great Northern.

Copeland’s story began in 2016 with a successful crowdfunding campaign supported by more than 370 backers. After restoring a former cinema and the former Ards Bottling Company building, the distillery moved into its permanent home near the harbour in Donaghadee. In the 17th century, this harbour was known as “The Merchants’ Quay” and gave the whiskey its name.
