With its Amontillado finish, this single malt opens a sherry series from W.D. O'Connell. The series explores how different sherry casks shape malt and pot still whiskeys. Amontillado is a dry style of sherry; here, the finish follows four years of maturation in ex-bourbon casks.

Great Northern Distillery distilled the whiskey in 2018. In April 2022, Daithí O'Connell transferred it into Amontillado sherry casks, where it matured for approximately another year. The five-year-old whiskey was bottled at 50% without added colouring.

Tasting Notes:

• Nose: On the nose, honeyed sweetness and citrus notes combine with a touch of nuttiness and a light peat note.
• Palate: The palate offers vanilla and toffee, accompanied by dried fruit and toasted wood.
• Finish: The long finish leaves a warming sensation.

Distillery/Bottler:

W.D. O'Connell combines independent bottling with the Irish tradition of whiskey bonding: merchants select whiskey, oversee its maturation and release it under their own name. The company operates in Kilmacthomas, County Waterford, on the site of a former 19th-century poorhouse and workhouse. Its activities include cask management, marrying whiskeys and bottling.

The whiskey comes from Great Northern Distillery in Dundalk, County Louth. Operating since 2015, the distillery also produces whiskey for independent brands and smaller distilleries. Using pot stills and continuously operating column stills, it makes several types of Irish whiskey, including malt, grain and pot still whiskey. W.D. O'Connell was responsible for the subsequent finish in Amontillado sherry casks.
