They began in Union Hall, in a room behind Denis’ house, using two small stills purchased from a Swiss schnapps producer. The company moved to Skibbereen in 2014; today, the distillery is located on Marsh Road.
West Cork triple-distils its whiskeys and bottles them on site. Its working methods include copper pot stills built in-house and gas chromatography.
