Xin Gin brings Irish and Asian influences together in a juniper-led dry gin. Orange peel and lemongrass add fresh citrus notes, while persimmon shapes its fruity side. Dill contributes an earthy, herbal undertone, and cinnamon adds spice. The gin has an alcohol content of 43% and comes in a 0.7-litre bottle.

The name Xin is pronounced “Shin” and means “heart” or “feelings” in Mandarin. The bottle design also reflects the connection between the two cultures, combining Celtic spiral motifs with a modern Asian aesthetic.

Tasting Notes:

• Nose: On the nose, rose and persimmon mingle with citrus and herbal notes.
• Palate: On the palate, juniper and citrus peel meet rose and persimmon. Dill appears in the background.
• Finish: Subtle exotic fruit notes linger on the finish, accompanied by gentle cinnamon warmth.

Distillery/Bottler:

Xin Gin was created by Michelle and Gareth McAllister, a married couple from Dublin who lived in Asia for many years. Michelle developed the gin out of her enthusiasm for international gin styles and her desire to combine flavours encountered on her travels with Irish botanicals. She is a trained psychologist and collects gins from around the world; Gareth is a chemical engineer with many years of experience in the chemical and process industries.

After returning to Ireland, the couple established a family business in County Galway with Ahascragh Distillery. The distillery occupies a restored early 19th-century mill, where grain was still being milled into flour until the 1950s. Today, the facility combines wind and solar energy with high-temperature heat pumps and an energy-efficient storage system. Its energy supply is thus as much a part of the distillery’s concept as the reuse of the historic building.
