Liqueur de Cacao Blanc captures cocoa aromas in a crystal-clear, colourless liqueur. Joseph Cartron uses cocoa beans from Ivory Coast, which are lightly roasted, crushed and then processed in a still. Distillation extracts the beans’ aromatic components; the finished liqueur contains 24% alcohol.

Its restrained sweetness and delicate chocolate notes make it a versatile cocktail ingredient. In a White Chocolate Martini, for example, it can be combined with vodka and cream. It also adds a cocoa accent to sparkling wine or warm milk-based drinks.

Tasting Notes:

• Nose: The aroma is restrained, combining roasted notes with buttery hints and bitter cocoa.
• Palate: The liqueur opens with a syrupy texture on the palate, but the flavour of the cocoa bean quickly comes to the fore. Its balance softens the bean’s green, austere character.
• Finish: The finish reveals a pleasant menthol-like note.

Distillery/Bottler:

Joseph Cartron founded the house bearing his name in 1882 in Nuits-Saint-Georges, Burgundy. The company initially supplied local inns and restaurants with lemonade and soda water while also producing liqueurs, including a cocoa liqueur. Double Crème de Cassis became particularly significant in its history.

The house uses distillation to extract aromas for its citrus, coffee and cocoa liqueurs. It works with a Poire à parfum still, a type also used to extract fragrant substances. This process extracts the respective aromatic components from cocoa beans, coffee beans and the essential oils of citrus fruits.
