Special Features:

All twelve years of maturation take place in ex-bourbon casks under tropical conditions. Alcoholes Finos Dominicanos produces Honest Dominican from fresh sugarcane juice using column distillation. There is no subsequent continental maturation or finish in a second cask type. This bottling is number 2 in the Single Origin Collection from Jack Crap Spirits.

After maturation, the rum is refined in Germany and bottled at 45%. It contains 18 grams of added sugar per litre, with no added natural flavourings or colouring. The packaging also makes deliberate use of recovered materials: the bottle contains at least 95% recycled glass, while the label is made from 95% sugarcane paper. Cork and charcoal are used for the closure.

Tasting Notes:

• Nose: The nose brings together oak and caramel with vanilla and cinnamon. Citrus notes and touches of tobacco and leather add to the aromatic profile.
• Palate: On the palate, creamy caramel and warm vanilla meet honey and oak. A subtle cinnamon note and roasted coffee complement the sweetness with spice and roasted flavours.
• Finish: Vanilla and fruity notes linger on the finish.

Distillery/Bottler:

Alcoholes Finos Dominicanos uses locally grown sugarcane for this rum. Immediately after harvesting, the cane is processed into juice rather than using molasses as the raw material. The distillery also supports local communities, educational and environmental projects, and the development of its employees.

Nina Vorster is behind Jack Crap Spirits. Her brand concept combines naming the distilleries with transparent disclosure of sugar and other additives. For Honest Dominican, she deliberately chose a more approachable bottling: the rum was imported at 63%, reduced to 45% and sweetened. Sugar declarations and nutritional tables on the bottles make this decision transparent.
