Special Features:

This white rum from Port Ellen reveals its character without cask ageing. Islay Rum Geal combines Caribbean inspiration with production on the Scottish island of Islay. Its Gaelic name means white, clear and pure, among other things. A subtle smoky nuance adds to its character. The miniature contains 0.05 litres of rum at 45% alcohol, with no added colouring.

The rum starts with molasses, which is fermented with water and yeast. For distillation, the distillery uses a copper pot still followed by two retorts. These produce an effect similar to triple distillation within a single distillation run. In this unaged bottling, the spirit itself therefore takes centre stage rather than aromas from an ageing cask. The full-bodied rum is equally suited to tasting neat or making a classic Daiquiri.

Tasting Notes:

• Nose: On the nose, butterscotch and green banana peel combine with a light citrus note.
• Palate: The palate reveals tropical fruit and green banana once again. Fresh herbal and mineral notes complement the flavours, alongside a subtle malt biscuit note.
• Finish: The finish feels light and retains fresh, fruity impressions.

Distillery/Bottler:

The Islay Rum Company operates Islay's first rum distillery in the former Hastie's lemonade factory in Port Ellen. The restored building stands between Kilnaughton Bay and the Borraichill. Behind the project are Brian Crook of The Vintage Malt Whisky Company and distiller Ben Inglis, who grew up on Islay and whose interest in distillation eventually led to his own rum distillery.

Ben Inglis designed the equipment with its copper pot still and two retorts; it was built by Speyside Copper Works in Scotland. The distillery runs entirely on electricity from renewable sources and uses a closed-loop cooling system to save water. It returns a substantial proportion of the liquid remaining after distillation to the next fermentation. This process supports flavour development while reducing the need for water and heat energy.
