Three years of maturation in an ex-Apera cask and the hot, dry climate of New South Wales shape this young single malt. That Boutique-y Whisky Company selected a three-year-old Black Gate for the Australia Series MMXXI and had it bottled at 46%. The edition comprises 254 individually numbered bottles, each containing 0.5 litres, and comes with gift packaging.

The label also tells a story from everyday life at the distillery: Frankie the dachshund occasionally chases emus off the property. These nocturnal outings inspired the illustration.

Tasting Notes:

• Nose: On the nose, the whisky recalls old Cognac with a slightly dusty note. Red grapes, dark sugar and deeply browned caramel are joined by hints of liquorice toffee.
• Palate: The palate is full-bodied, rich and oily, with pronounced dark caramel. Buttered, well-browned toast and toffee apple round out the flavours.
• Finish: The finish lingers, retaining a rich, substantial texture.

Distillery/Bottler:

Black Gate is located in Mendooran, New South Wales, and is run by Brian and Genise Hollingworth. Brian, originally a car mechanic and later a teacher, learned to distil with Bill Lark in Tasmania. The distillery produces dark rum as well as single malt. Small maturation casks are part of its approach; the heat increases evaporation and the extraction of compounds from the cask. Maturation is therefore closely monitored through tasting. Whisky production ended in 2022, while existing stocks continue to mature in the warehouses.

That Boutique-y Whisky Company is an independent bottler that selects whiskies from well-known and lesser-known distilleries and also develops its own blends. The company worked directly with the distilleries for its Australian series. Its hand-drawn labels draw on stories about the individual distilleries and their people; Emily Chappell created the illustrations for the Australia Series.
