Tasting Notes:

  • Nose: Pronounced paraffin and cod liver oil emerge first, followed by walnuts and a hint of ripe banana. Light pepper, pine and almonds then appear, alongside nuances of light tobacco. Hay, cosmetic powder and wildflowers complete the bouquet.
  • Palate: Honey and an unusual nuance reminiscent of cannabis come first on the palate. Delicate pear notes, nuts, herbs and an impression of Belgian tripel beer follow. Finally, a gentle sweetness of yellow fruits, pine needles and tobacco leaves linger.
  • Finish: The medium-length finish brings ginger, hay, walnuts and pears. Aromatic herbs linger in the aftertaste.

Distillery/Bottler:

Bunnahabhain stands on Islay's remote northeastern coast. William Robertson founded the distillery in 1881 with William and James Greenlees; production began in 1883. A village with roads and homes for employees and their families grew up alongside the distillery. Water for production comes from the Margadale spring to the north of the distillery. Bunnahabhain's traditional house style is unpeated, robust and oily.

As the independent bottler, Signatory Vintage selected the cask and bottled this whisky. Andrew Symington founded the company with his brother in 1988, having developed his enthusiasm for single-cask whiskies at the Prestonfield House Hotel in Edinburgh. In 2002, he acquired Edradour distillery near Pitlochry; the entire operation had moved there by 2007. Additional warehouses later provided space for more than 20,000 casks.
