Cónocht an Earraigh combines maturation in first-fill bourbon casks with an extended finish in Cabernet Sauvignon casks. This triple-distilled Irish single malt is the sixth release in Dingle’s Wheel of the Year series and celebrates the spring equinox. The series comprises nine releases inspired by the Celtic annual cycle and Wren’s Day. This edition is limited to 3,000 bottles.

Dark and red fruit, spiced pastries and toffee with dark sugar syrup shape its character. In the finish, the combination of sweet fruit and dry tannins contrasts with the pastry sweetness on the palate. The whiskey is bottled at 50.5% without chill filtration or added colouring.

Tasting Notes:

• Nose: On the nose, ripe plums and blackberries mingle with icing sugar, toasted almonds and muscovado sugar.
• Palate: On the palate, pronounced red fruit notes meet subtle spice, gingerbread and fruit tart. Toffee with dark sugar syrup adds to the flavours.
• Finish: The mouthfeel persists into the finish, with sweet fruit notes and dry tannins in balance.

Distillery/Bottler:

The independent Dingle Distillery is located in Dingle, County Kerry, on Ireland’s Atlantic coast. Oliver Hughes, Liam LaHart and Peter Mosley founded it in 2012 after working in Ireland’s craft beer scene. Their aim was to produce whiskey in small batches. The distillery uses triple distillation for its single malts. Cónocht an Earraigh was distilled, matured and bottled at Dingle Distillery and is an official Dingle bottling.
