GlenAllachie 15 Year Old brings together the distillery’s Speyside character and carefully selected maturation in Pedro Ximénez and Oloroso puncheons and hogsheads. Billy Walker chose these two sherry cask types to complement the spirit’s sweetness and chocolate notes while balancing cask influence with distillery character. The bottling has been part of the Core Range since 2019. It is bottled at 46%, without chill filtration or added colouring.

Alongside fruity and honeyed impressions, the whisky offers cinnamon, vanilla toffee and dark chocolate. Its mahogany colour develops without added colouring.

Tasting Notes:

• Nose: Dark cherries, golden syrup and sweet spices lead on the nose. Toffee, glazed figs and hazelnuts add subtle nuances.
• Palate: On the palate, GlenAllachie’s characteristic heather honey combines with orange peel, cocoa and ginger.
• Finish: The finish brings together spicy ginger, caramelised brown sugar and dark chocolate.

Distillery/Bottler:

This single malt comes from GlenAllachie Distillery in Speyside and belongs to its own Core Range. The distillery was built in 1967 to designs by William Delmé-Evans and began production in 1968. Its largely gravity-fed layout was intended to reduce energy requirements.

In October 2017, Billy Walker and his business partners Trisha Savage and Graham Stevenson took over the distillery. Previously, its whisky had mainly been used for blends; its first own single malt core range followed in 2018. For the 15-year-old, Walker monitored the development of various casks from the time of the takeover before selecting the whiskies for this bottling.
