Viking Heart matures for 15 years in a combination of first-fill sherry-seasoned American and European oak casks and refill casks previously used to mature whisky. For this bottling, Master Whisky Maker Gordon Motion selected predominantly European sherry-seasoned oak for warm spice notes, while American sherry-seasoned oak adds sweet vanilla. The single malt is bottled at 44% and retains its natural colour without added colouring. Viking Heart is presented in a white ceramic bottle.

Grilled pineapple and vanilla set the sweet tone, while toasted cinnamon, lemon peel and heather honey provide contrast. The aromatic smoke from local heather-rich peat remains subtle, linking fruit and spice.

Tasting Notes:

• Nose: On the nose, pineapple, heather honey and vanilla mingle with crème brûlée and cinnamon. Brown sugar and orange peel add to the sweet and spicy impressions, while gentle peat smoke stays in the background.
• Palate: On the palate, sweet vanilla pastries and heather honey meet pineapple and lemon. Grilled fruit notes, toasted cinnamon, heather and peat complement the full-bodied flavour.
• Finish: Cinnamon spice and gentle, aromatic peat smoke remain present in the lingering, silky finish. Citrus and vanilla notes linger alongside toasted oak.

Distillery/Bottler:

Highland Park has been producing whisky since 1798 in Kirkwall on Mainland, the largest island in Orkney. The distillery uses locally cut, heather-rich peat from Hobbister Moor. Its use during malt drying gives the whisky its floral smoke aromas. Highland Park malts some of its barley on its own malting floors, turning it by hand.

As part of its general cask preparation, Highland Park has American and European oak casks seasoned with sherry in Spain. After around two years, they are emptied and transported to Orkney to be filled with spirit. The cool island climate shapes the subsequent maturation. Viking Heart is an official Highland Park bottling; the distillery has belonged to Edrington since 1999.
