Maturation exclusively in first-fill ex-bourbon casks shapes PUNI Gold. Made from malted barley, wheat and rye, the whisky matures for five years in above-ground warehouses. Here, the temperature differences between summer and winter have a particularly pronounced effect, accelerating its natural maturation.

Its gentle, sweet character brings together summer fruits, vanilla and a subtle touch of spicy oak. PUNI Gold retains its natural golden colour and is neither chill-filtered nor coloured. It is bottled at 43% in a 0.7-litre bottle and comes in gift packaging.

Tasting Notes:

• Nose: Sweet vanilla leads at first, accompanied by a light rye note. Honey gradually emerges. Light-coloured fruit notes then appear, particularly mango, before spicy oak rounds out the nose.
• Palate: Sweet summer fruits lead on the palate, with strawberry, raspberry and mango. A light pepper note follows, while the sweetness remains. Vanilla and delicate oak spice complement the flavours. A slightly fuzzy sensation develops on the tongue, with subtle dryness on the palate; the sweetness nevertheless remains distinct.
• Finish: The long finish remains fruity and sweet. A trace of black pepper adds a spicy accent at the very end.

Distillery/Bottler:

The Ebensperger family founded PUNI in 2010 in Glurns, in South Tyrol's Vinschgau valley. Italy's first whisky distillery takes its name from the River Puni. Distillation began in 2012 after two years of construction, and the first whiskies, NOVA and ALBA, were released in 2015.

PUNI ferments its wort in five washbacks made from South Tyrolean larch. Fermentation lasts approximately 96 hours, producing both alcohol and aromas for the future spirit. This is followed by double distillation. The distillery takes particular time over the second distillation, which can last up to twelve hours. Before entering the casks, the spirit is diluted with water to 60% alcohol.
