Distillery/Bottler: Thistly Cross Cider Co. Ltd. was founded in 2008 by Peter Stuart and Ian Rennie. They produce award-winning cider in small batches at Belhaven Fruit Farm on the east coast of Scotland. The production process includes hand-pressing local apples, slow fermentation with champagne yeast, and a six-month aging period to achieve the characteristic smooth and balanced flavor.
