Special Features:

The Full Irish combines three Irish whiskey styles in Blackwater's first blend: five-year-old Single Malt and five-year-old Pot Still Whiskey from its own distillery each account for 45%, complemented by 10% seven-year-old Grain Whiskey. Together, the components contain barley, malted barley, wheat, oats, rye and maize.

After maturation in Bourbon Barrels, the whiskey receives a finish in stout casks from the local Hopfully Brewing Company in Waterford. Its character combines fruity and cereal notes with chocolate and spice. The whiskey is bottled at 48.5% without chill filtration or added colouring; the bottle contains 0.5 litres.

Tasting Notes:

• Nose: On the nose, puréed pome fruit, biscuit-like cereal notes and melted chocolate mingle with dark honey and caramel.
• Palate: The whiskey is creamy, nutty and smooth on the palate. Smoke accompanies the sweetness, with a hint of banana bread.
• Finish: The long finish is savoury, recalling cocoa cake and citrus fruit. Pepper and spices also shape the lingering flavours.

Distillery/Bottler:

Blackwater Distillery was founded in 2014 and is located in Ballyduff Upper on the River Blackwater in western County Waterford. Peter Mulryan and Caroline Senior are members of the founding team. Housed in a converted hardware shop dating from the 1950s, the small distillery produces gin and Irish whiskey in small batches. John Wilcox is Head Distiller. For The Full Irish, Blackwater produces the malt and pot still components itself and combines them with grain whiskey to create a blend.
