Special Features:

This Dingle single malt matured for eight years in a single Oloroso sherry cask selected for the Kirsch edition. The whiskey was triple-distilled on 25 March 2015 and bottled at cask strength of 59.4% on 7 January 2024. The cask yielded 348 bottles. The whiskey is not chill-filtered and contains no added colouring.

Oloroso maturation gives the whiskey notes of walnut, sultanas and dark fruit. Apricot, tobacco, leather and oak add further depth. A delicate lemongrass note may emerge with a little water.

Tasting Notes:

• Nose: Walnut and sultanas lead on the nose. Apricot and cherry follow, then tobacco and white pepper.
• Palate: On the palate, dark chocolate and date meet dried apricot. Leather and oak spice lend a bitter edge to the full-bodied whiskey.
• Finish: The long finish retains walnut and dark cherry, with roasted notes and cinnamon lingering.

Distillery/Bottler:

The independent Dingle Distillery has been distilling on Ireland’s Dingle Peninsula since 2012. It makes, matures and bottles its whiskey on site. This single malt is also bottled by the distillery itself.

At Dingle, mashing, adding yeast and separating the distillate are also done by hand. The distillery fills its casks by hand and monitors maturation through regular sampling before bottling the whiskey.
