Special Features:

An extended finish in former rye whiskey casks complements Dingle Lá le Bríde’s initial maturation in first-fill bourbon casks. These casks held Dingle whiskey for the first time after previously containing bourbon. The triple-distilled single malt combines sweet biscuit and fruit notes with pronounced spice and herbs.

The second edition in the Wheel of the Year series, Lá le Bríde is dedicated to the Irish spring festival of the same name, also known as Imbolg. The series draws on the festivals of the Celtic annual cycle. The cross depicted on the bottle and gift packaging refers to Saint Brigid, whose feast day is celebrated on 1 February. The release comprises 10,000 bottles.

The whiskey is bottled at 50.5% without chill filtration or added colouring. The bottle contains 0.7 litres and comes in gift packaging.

Tasting Notes:

• Nose: On the nose, honey and crushed raspberries meet cream-filled biscuits and chocolate biscuits. Butterscotch adds further sweetness.
• Palate: Bold spice makes a distinct impression on the palate. Herbs, caramel reminiscent of a soft chewy sweet and candied ginger combine with chopped mint.
• Finish: The sweetness on the finish initially recalls toffee melting on the tongue. Spiced fruit notes then emerge.

Distillery/Bottler:

Dingle Distillery is located in County Kerry on Ireland’s Atlantic coast. Oliver Hughes, Liam LaHart and Peter Mosley founded it in 2012 after previously working in the Irish craft beer scene. Their aim was independent, small-batch whiskey production. Alongside single malt, the distillery also produces single pot still whiskey.

Dingle uses a traditional wooden mash tun and water from its own well, approximately 73 metres deep. Fermentation takes place over 72 hours in wooden washbacks, using dry distiller’s yeast and no temperature control. The spirit is then triple-distilled in three pot stills made by Forsyths. The distillery matures its whiskeys on site and has its own bottling facility. It uses only malted barley for its single malts.
