Micil Earls Island brings together two different cask finishes: after maturing in former bourbon casks, the whiskeys gain additional influences from Bordeaux red wine casks and Quarter Casks previously used for peated whiskey. The red wine casks deepen the fruity, spicy character, while the former peated whiskey casks contribute a subtle smoky note.

The recipe consists of 75.5% whiskey finished in 225-litre Bordeaux casks made from French oak. The remaining 24.5% is finished in 125-litre American oak Quarter Casks previously used for peated whiskey. After nine months, the two components are married and brought to 46%. The whiskey is bottled without chill filtration or added colouring.

This bottling pays tribute to Galway’s former whiskey distilleries and the wine merchants who settled in the port city. Its flavour spectrum ranges from sweets and apple sweets to maraschino cherries, lightly tart redcurrants and rhubarb. Cinnamon, nutmeg, marzipan and toasted nuts complement this fruity side.

Tasting Notes:

• Nose: On the nose, sweet vanilla custard and spiced apple pie mingle with red summer berries.
• Palate: The palate reveals smoked, salted almonds and berry compote, accompanied by plenty of baking spices.
• Finish: The spice builds on the finish, with delicate notes of toasted marzipan emerging.

Distillery/Bottler:

Micil has its roots in Galway and takes its name from Micil Mac Chearra, who began illicitly distilling poitín in Connemara in 1848. The family passed down its knowledge and recipes orally in Irish over six generations. For its own distillation, Micil uses small pot stills and determines the cuts by sensory assessment. Its own whiskey production began in 2020; for Earls Island, Micil selects the casks, carries out the finishing and independently bottles sourced whiskeys.

The components of Earls Island were distilled at Great Northern Distillery in County Louth. The distillery is located in Dundalk on the site of the former Great Northern Brewery, which was acquired in 2015. It supplies brands with mature whiskey and new-make spirit in the malt, pot still and grain categories.
