Volume: 0.7 litres | Alcohol content: 44% | Colouring: Yes
Special Features:
The Dead Rabbit combines malt and grain whiskey. It matures for five years in former bourbon casks before being finished in casks of new American oak that are half their size. It is bottled at 44% alcohol.
The whiskey grew out of a collaboration between the New York bar The Dead Rabbit Grocery & Grog and The Dublin Liberties Distillery. Its flavours range from vanilla and cedarwood to dark chocolate, orange and oak, with buttery pastry and spices in the finish.
Tasting Notes:
Distillery/Bottler:
The Dead Rabbit brand was developed in 2018 with Sean Muldoon and Jack McGarry, founders of the New York bar of the same name. The Dublin Liberties Distillery opened in 2019 in Dublin’s historic Liberties district. Its 18th-century building previously served, among other uses, as a mill and a tannery. The distillery works with Irish malt and uses different cask types to mature and finish its whiskeys.
