West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. They began in Union Hall, in a room behind Denis’ house, with two small stills purchased from a Swiss schnapps producer. In 2014, the distillery moved to Skibbereen.
As the distillery expanded, the team built much of the equipment it needed itself. The new site on Marsh Road in Skibbereen opened in 2020 and also houses the warehouses. The company remains Irish-owned and sources ingredients locally wherever possible.
