The wild service tree wood finish shapes the nutty, herbal character of this release in the five-part comparative series The Woodpecker & The Leprechaun. For the series, the same bourbon-cask-matured Single Malt was divided between casks made from apple, pear, cherry, mulberry and wild service tree wood to explore their different influences.

Triple-distilled at Great Northern Distillery in May 2017, this Irish Single Malt initially matured for five years in a first-fill ex-bourbon cask. Its twelve-month finish in a 50-litre wild service tree wood cask began in February 2023. In February 2024, the whiskey was bottled at a total age of six years and nine months and a natural cask strength of 57.3%. The yield was 91 bottles of 0.5 litres each; the whiskey has no added colouring and is non-chill-filtered.

Tasting Notes:

• Nose: On the nose, fresh green hazelnuts mingle with grass, spices and herbs. Honeydew melon, shortbread, forest honey and rice pudding add to the aromas.
• Palate: On the palate, sweet fruit, honey and vanilla pudding meet nutty notes and shortbread.
• Finish: The medium-length finish is creamy and sweet, with notes reminiscent of light-coloured fruit.

Distillery/Bottler:

Great Northern Distillery in Dundalk, County Louth, has been producing whiskey since 2015 and also supplies independent brands and other distilleries. Using pot stills and column stills, it produces grain whiskey, triple- and double-distilled malt whiskey, peated malt whiskey and pot still whiskey. It supplied the triple-distilled Single Malt for this bottling.

Sebastian Büssing is the person behind the independent bottler The Spirits Alchemist. For his first Irish whiskey project, he developed The Woodpecker & The Leprechaun series together with Irish whiskey expert Neil Saad. Their approach pairs a shared base whiskey with finishes in unusual types of wood.
