This Single Pot Still whiskey spends its five years of maturation in first-fill ex-bourbon casks. It is made from malted and unmalted barley and is triple-distilled. For this release, West Cork uses its purpose-built Rocket Still, an unusually fast pot still developed and constructed in-house.

Its creamy, spicy pot still character combines with green and fruity impressions and sweet cereal notes. West Cork bottles the whiskey at 43% alcohol, without chill filtration or added colouring.

Tasting Notes:

• Nose: On the nose, hay and freshly cut grass mingle with sweet pear and caramel notes. Hints of dried plums appear in the background.
• Palate: Barley and malt stand out on the palate. Vanilla complements the cereal notes, while black pepper provides a spicy counterpoint.
• Finish: A sweetness reminiscent of candyfloss lingers on the finish.

Distillery/Bottler:

West Cork Distillers is based in Skibbereen, County Cork. John O’Connell, Ger McCarthy and Denis McCarthy founded the company in 2003. Their first spirits were made in a room behind Denis’ house in Union Hall, using two small stills they had bought from a Swiss spirits producer. Production moved to Skibbereen in 2014, and the new distillery on Marsh Road opened in 2020.

As the business expanded, the team built a substantial proportion of its equipment itself. This includes the Rocket Still used for this pot still whiskey. West Cork whiskeys are distilled, cask-matured and bottled at the company's own site. The distillery thus combines its in-house equipment development with control over the subsequent production stages.
