Special Features:

A finish in former stout casks connects this West Cork whiskey with the Black’s of Kinsale brewery. The blend consists of 75% grain whiskey and 25% malt whiskey. It first matures in first-fill bourbon casks before being transferred to casks that previously held the Irish brewery’s stout. This finishing period shapes its chocolate character and adds coffee and vanilla notes.

This triple-distilled whiskey belongs to West Cork’s Beer Series. It is bottled at 40% without chill filtration or added colouring. The bottle contains 0.7 litres.

Tasting Notes:

• Nose: On the nose, chocolate notes meet raisins and freshly cracked nuts.
• Palate: Dark chocolate, coffee and vanilla come together on the palate.
• Finish: A ginger note appears on the finish.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. Their first distilling experiments took place with two small stills in a room behind Denis’ house in Union Hall. As the business grew, the decision to relocate was made in 2014. Today, the distillery is based in Skibbereen, County Cork, bringing distillation, cask storage and bottling together on one site. A substantial proportion of the distillery’s equipment was built by hand to meet its specific needs.

Alongside sensory assessment, West Cork uses gas chromatography: this analytical method separates and identifies compounds in liquids, helping to maintain consistent production. For its beer-cask series, the distillery also uses reverse osmosis to remove water from the stout or IPA and concentrate the beers before filling them into casks.
