Special Features:

This single malt combines maturation in first-fill bourbon casks with a subsequent finish in port wine casks from Quinta da Boeira. The port casks bring dark-fruit notes, complemented by vanilla, a little wood and spice. Part of West Cork’s Maritime series, the whiskey matures for five years in total and is bottled at 43% without chill filtration or added colour.

The Maritime series reflects the distillery’s coastal origins. Its bottle is modelled on historic spherical fishing floats. This distillery bottling contains 0.7 litres and comes without gift packaging.

Tasting Notes:

• Nose: The nose offers dates, raisins and dark berries alongside creamy vanilla. A hint of pepper adds spice.
• Palate: On the palate, fruity sweetness brings together apricots and dried plums with lively citrus acidity. Toasted nuts complement the fruit.
• Finish: The finish is soft, leaving vanilla, a subtle woody note and gentle peppery spice.

Distillery/Bottler:

West Cork Distillers was founded in Union Hall in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy. It began with two small stills and now operates in Skibbereen, County Cork. The distillery remains owned by its founders.

The distillery uses Irish grain and barley for its whiskeys and distils three times. For the Port Cask Single Malt, maturation in bourbon casks is followed by a finish in port wine casks; the whiskey is bottled by the distillery itself.
