Special Features:

A port wine finish follows this single malt’s maturation in first-fill bourbon casks. For the final maturation stage, West Cork uses port wine casks from Quinta Da Boeira. This bottling belongs to the Cask-Finish collection, in which different previous cask contents shape the whiskeys’ character; the port variant is the sweetest in this selection.

West Cork makes this whiskey in small batches using Irish malted barley and water from the Mullaghmesha Mountains, and distils it three times. It is bottled at 43% alcohol without chill filtration or added colouring.

Tasting Notes:

• Nose: On the nose, dried fruit combines with vanilla and toffee. Nutmeg and a hint of black pepper complement the sweet aromas.
• Palate: Sweetness takes the lead on the palate, accompanied by dried-fruit notes.
• Finish: The short finish reveals malt, berries and caramel, along with citrus and oak notes.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. Their first distillation experiments took place in a room behind Denis’ house in the coastal village of Union Hall. The founders used two small stills they had bought from a Swiss spirits producer. In 2014, the company moved to Skibbereen in south-west Ireland.

Some of the distillery equipment was built in-house as the business grew. Today, the Marsh Road site brings together distillation, cask storage and bottling: its equipment includes pot stills and column stills, while twelve warehouses provide space for the maturing stocks. This port-cask single malt is also produced, distilled and bottled in Ireland by West Cork Distillers.
