For the Triple Cask Reserve, Kimio Yonezawa marries carefully selected malt whiskies made in Scotland. They initially mature in ex-bourbon and ex-sherry casks before receiving a six-month finish in Japan in casks that previously held umeshu plum liqueur. The European release is bottled at 46% in bottles holding 0.7 litres; it is neither chill-filtered nor coloured.

In the broader aromatic profile, pear, lychee and blueberry complement the notes of plum and dried apricot. Black tea, vanilla and oak spice provide a spicy yet soft counterpoint.

Tasting Notes:

• Nose: On the nose, dried apricot and subtle vanilla mingle with black tea and fragrant oak spice.
• Palate: On the palate, sweet ume plum and dried citrus peel meet gentle oak, while mild alcoholic warmth adds another accent.
• Finish: The finish is long and soft, with subtle sweetness and lingering oak spice.

Distillery/Bottler:

Kaikyo Distillery is located in Akashi on the coast of the Seto Inland Sea and was founded by Kimio Yonezawa in 2017. In doing so, he built upon his family’s spirits production, which began in 1917; the distillery takes its name from the nearby Akashi Kaikyo Bridge.

The Yonezawa family’s fermentation tradition dates back to 1856. Kimio Yonezawa continues it as a fourth-generation sake brewer as well as a master distiller and blender. For Hatozaki, he selects and marries the malt whiskies and oversees their finishing in Japan.
