Special Features:
An Edinburgh Dram presents North British after 34 years of maturation. Thompson Bros. bottled this Single Grain Scotch Whisky at 40.1%. The label links the whisky to its home city: a colourful map of Edinburgh surrounds the product details.
The whisky is non-chill filtered and contains no added colouring. It may therefore become cloudy at low temperatures or when water is added. Its sweetness meets a distinctly woody character, while the oily texture and waxy impressions give it further definition.
Tasting Notes:
- Nose: The whisky initially offers aromas of brown Demerara sugar and rich vanilla custard, accompanied by the sweetness of fruit jelly. A subtle rubber note combines with a slightly musty impression of sawdust. With a little time, hints of ripe, juicy stone fruit emerge.
- Palate: On the palate, a waxy impression of honeycomb initially coats the tongue. Cooked plums and slightly floral plum jam follow. Woody notes give the flavour a noticeable grip, while the oily texture carries the flavours for a long time.
- Finish: Honey on toasted bread gradually gives way to the bitter note of citrus pith. This gentle bitterness provides a counterpoint to the sweetness. The woody notes remain but become noticeably softer; the finish feels warm and balanced.
Distillery/Bottler:
North British is part of Edinburgh's whisky history. Andrew Usher, William Sanderson and John Crabbie founded the company in 1885 to supply their own whisky brands with grain spirit. The distillery began operating in September 1887. For around a century, the participating companies worked together on a cooperative basis. Today, North British is owned by Diageo and Edrington.
Thompson Bros. is run by brothers Phil and Simon Thompson from Dornoch. Their work at the Dornoch Castle Hotel's whisky bar led them to start producing their own whisky in 2017, following a crowdfunding campaign. While their own whisky matured, they developed their independent bottling programme. Under the Thompson Bros. name, they source casks, allow whisky to mature further, and bottle single-cask releases and small batches at their warehouse on Station Road. They consistently avoid chill filtration and added colouring.
