Special features: The Waterford The Arcadian Organic: Gaia 1.1 is the first certified organic whiskey from Ireland and represents the Arcadian series of the Waterford Distillery. This single malt is made from 100% organically grown barley sourced from seven Irish farms. It is matured in a combination of first-fill bourbon casks, French oak, Vin Doux Naturel casks, and virgin American oak, resulting in a complex and unique flavor profile.

Tasting Notes:

• Nose: Aromas of orange peel, malty figs, seaweed, freshly mown hay after light rain, salted caramel, peppermint, rose water, and freshly turned earth.
• Palate: Spicy heat and zesty pepper on the tongue, cloves, figs, an oily texture that dries in the mouth, cherries, butterscotch, pears, malty notes, and layers of spices.
• Finish: Long, zesty oiliness that dries and leaves a lingering sweetness.

Distillery/Bottler: The Waterford Distillery was founded in 2015 by Mark Reynier and is located in Waterford, Ireland. It places great importance on the provenance of its ingredients and works closely with local farmers to reflect the diversity of Irish terroir in its whiskies.
