This Aultmore matured for 16 years in first-fill Oloroso sherry butts. Signatory Vintage bottled the whisky, distilled in 2009, in 2025 at 57.1% as 100 Proof Exceptional Cask Edition 14. This 0.7-litre bottling is non-chill-filtered and contains no added colouring.

The first-fill Oloroso casks give the whisky a distinctly sherry-forward character. Dark dried fruit such as raisins and figs combines with dark chocolate and toffee, complemented by malt, cocoa, oak and baking spices in a rich, full-bodied aromatic profile.

Tasting Notes:

• Nose: The nose is led by intense Oloroso and sherry notes, with dark dried fruit, raisins, figs and dark chocolate. Nuts and delicate baking spices add further accents.
• Palate: On the palate, the rich, powerful body combines dark chocolate and caramel with roasted nuts, malt, cocoa and spicy oak.
• Finish: The finish is long and warm. Creamy toffee, delicate baking spices and sweet oak carry the silky finale.

Distillery/Bottler:

Aultmore began production in 1897 and was founded by Alexander Edward. The distillery produced the Speyside single malt at the heart of this bottling.

Andrew Symington founded Signatory Vintage with his brother in 1988. The independent bottler later moved its operations to the site of Edradour Distillery in Pitlochry. For this edition, Signatory Vintage selected the 16-year-old Aultmore from the Oloroso sherry butts and bottled the whisky.
