Haitian Proof puts the sugarcane spirit itself centre stage, without cask maturation. Barbancourt distils this white rum from pure sugarcane juice and bottles it at 55% alcohol, making it considerably stronger than the previous white version at 40%. Its high strength gives it presence in cocktails while allowing its floral, fruity and vegetal notes to remain distinct.

The rum is made from Madame Mevs, a Haitian sugarcane variety. It is column-distilled, without chill filtration or added colouring. It comes in a 0.7-litre bottle without gift packaging.

Tasting Notes:

• Nose: The initially rather light nose combines flowers and sweets with red fruits reminiscent of grenadine syrup. With aeration, the fruity impressions become more pronounced and take on a milky note, like a yoghurt sweet. Delicate vegetal notes of fresh herbs and eucalyptus add to the bouquet.
• Palate: Citrus notes lead on the palate, bringing freshness and a slight bitterness alongside lively spice notes. Despite its power, the rum feels controlled.
• Finish: The finish remains lightly fruity. Banana sweets and delicate strawberry notes give way to dark berries with milky nuances.

Distillery/Bottler:

Dupré and Labbé Barbancourt founded the house in Haiti in 1862. In 1946, Jean Gardère moved the distillery to the Plaine du Cul-de-Sac near Port-au-Prince. D. Gardère Holdings acquired all shares in 2020. Delphine Gardère runs the family business in its fifth generation.

Barbancourt processes sugarcane into juice rather than using molasses as its starting material. Four mills press the cane, and the distillery has a three-column distillation system: two columns are stainless steel and one is copper. This approach to processing sugarcane shapes the house's production methods. While other bottlings subsequently mature in wood, Haitian Proof remains unaged.

Facts:
