Special Features:

For this Foundations release, Bimber’s peated single malt matured in Moscatel sherry cask No. 465. The single cask brings the whisky’s smoky side together with the fruit and sweetness that emerge alongside the peat when tasted. Distilled in 2019, this release yielded 301 bottles.

The whisky is bottled at 58.5% in a 0.7-litre bottle with a tube. It is not chill-filtered and contains no added colouring. Earthy and floral impressions accompany the smoke on the nose; on the palate, heather honey, figs and raisins provide a fruity, sweet counterpoint.

Tasting Notes:

• Nose: At first, the whisky smells of damp earth, dried flowers and ash, with only a hint of Tiger Balm. As it opens, rose petals and candied orange join notes of Russian leather and incense.
• Palate: On the palate, heather honey, figs and raisins contrast with an oily peat note. Tar and smoke share that smoky side with a lightly medicinal spiciness.
• Finish: The long finish begins spicy and medicinal before a sweet coconut-milk note emerges. Salty, camphor-like impressions and a note reminiscent of Bündnerfleisch linger.

Distillery/Bottler:

Bimber is an independent distillery in west London. Its first casks were filled in 2016, and its first single malt appeared in 2019. The barley comes from a single farm and is malted on traditional malting floors. Bimber mashes by hand and ferments the wort for around seven days in wooden washbacks before distilling it in small, directly fired copper stills.

The open washbacks, made from lightly toasted American white oak, were developed with Bimber’s own cooper. Cooling plates keep the fermentation temperature steady, and Bimber uses its own yeast strains.
